Mmm, baconIt really is mcagail, isn't it? If someone just came up to you and asked if you'd like to have a strip of pan-fried cured pork belly, you'd probably say no thanks. However, if they ask if you'd like bacon, you start salivating, your eyes glaze over, and you simply nod and murmur, Yes, please. Bacon isn't just for breakfast and burgers anymore it's everywhere. From to , America is crazy about bacon. In fact, there's even a term for it .So why does bacon taste so, so good?Swine scienceThe reason why bacon tastes (and smells) so good can be chalked up to the same thing that gives toast, coffee, fried onions, and others such a pleasant, enticing smell the . Put simply, the Maillard reaction is the chemical reaction that results when you combine an ammino acid (found in the meat of the bacon) with a reducing sugar (found in the fat of the bacon) and apply heat.So slap that slab of bacon down on the griddle, crank up the heat, and the delicious smell and taste of science.Bacon photo bya0

I was deeply saddened to hear of Ted's passing. He was such a kind man, always had a joke, and I always enjoyed his conversation, and all of his amazing pictures enjoying his family. I only met his girls one time, on a visit to Fl, but I felt like I've known them for years, he was so proud of his family. My thoughts and prayers are with his family and all who loved him. I will miss him dearly. Carol Ortner, Fl.

Bill and I had many fun times with Ted during his winter visits in Florida. He loved our little dog Harley, that he always called "Hardly." He had a great sense of humor and I enjoyed debating politics with him. Ride Free Ted!

Sorry for the loss of Captain Ted. Many memories of good conversations with him. Especially the infamous trip on his boat to the 1000 Islands. His brother-in-law, Les & I still share stories of this adventure.

We first met Ted after we purchased our first gold wing back in 1982 and then joined Chapter E Gold Wing Road Riders Association. Ted got the biggest kick out of Roger's speech on safety tips for the gold wings and the weep holes at one of the meetings. Ted reminded Roger of it often. Ted embraced life and loved to tell and make jokes to make people laugh. He touched the hearts of so many people throughout his life and will always be with everyone he touched. We love you Ted!

We are so very thankful to have had "Teddy-Ted" in our lives and especially our children's lives. Mason, Carter and Abigail will forever have fond memories of frogging at Teddy's, winning gold fish at the carnival and hanging bird feeders around our home... Always in our hearts will be a very special place for Teddy-Ted.
